Triple Berry Cottage Cheese Parfait

Ingredients:
1 1/4 cup fresh or frozen mixed berries (strawberries, blueberries, raspberries)
1/2 cup cottage cheese (blended until smooth)
Honey or sugar to taste
Instructions:
Prepare the Berries – If using frozen berries, allow them to thaw slightly for better texture and easier layering.
Blend the Cottage Cheese – Add cottage cheese to a blender or food processor and blend until smooth and creamy.
Assemble the Parfait – In a wine glass or parfait dish, start with a layer of berries.
Add a dollop of the blended cottage cheese.
Drizzle with honey or sprinkle with a bit of sugar.
Repeat the layers until the glass is full, finishing with a berry layer on top.
Optional Add-ons: Top with granola, chia seeds, or crushed nuts for crunch. You could always substitute plain Greek yogurt in this recipe. I prefer the cottage cheese, it gives it a slight savory taste, balancing the sweet berries and honey perfectly!
